lately...

i've been eating a lot of these...

but in addition to eating too many cupcakes, i've also been feeling quite domestic. i've been making baby food! :) thanks to leigh ann, i bought this

6 months!



campbell turned 6 months about a week or so ago, and i took her in for her 6 month well check today. she weighed in at a whopping 17 lbs and is 25.5 in long! i can't believe that when we brought her home from the hospital she only weighed 5 lb 4 oz! she's really growing now :)

things that we love about her in this stage of life:
-she smiles ALL the time!
-when she sleeps she tucks her thumbs in
-she has had a few 'belly laughs' that are awesome!
-sleeping 11.5 hours each night and eats 4 times/day
-she loves eating solids
-she loves going to the nursery at church and her bsf class!

in other news...

1. we got our christmas tree! campbell picked it out all by herself! i really think she had a good time at the tree farm. we are so excited for campbell to celebrate her first christmas! i'm really looking forward to starting our own family traditions and going over with her the true meaning of christmas! next year will be even better when she can really understand and participate more. :) its amazing how children change you...christmas this year brings on a whole new meaning for me as a mom. my heart is overflowing with joy and gratitude to The One who blessed us with this sweet baby girl.



2. we had to take wallace into the surgery center this morning because his back leg all of a sudden became swollen and inflamed...he wasn't even touching it to the ground. so, i dropped him off this morning (hesitantly) for an 'exploratory mini-surgery' if you will, to find the cause of his sudden leg trauma. luckily for our wallets, there was nothing wrong with the plate in his leg or with the screws, so they're not really sure why his leg acted up...we just need to continue antibiotics for a couple of weeks. in the picture below, they suggested we put a long sleeved t-shirt on him to prevent leakage on the floor! his legs are going through the arms and his tail is going through the head hole :) it took him a while to figure out how to walk with it on...

in case you didn't know, forgot, or couldn't tell by our shirts: our last name is woolsey :)



aaron's aunt patsy got us all these shirts, i think before campbell was even born! we've been wanting to take a picture to show her for a while, but the last time we were all together some people forgot their shirts...so we took one over thanksgiving. thanks aunt patsy for the shirts! campbell can't wait to be enrolled at 'woolsey university' :)

happy birthday to me!

i turned 28 on saturday...geez i'm getting old. i'm now officially 2 years away from 30! anyway, the day was pretty much uneventful - driving 7-8 hours from indianapolis to rolla, missouri just to watch football all night.

so tonight aaron 'surprised' me with a wonderful dinner with some of my closest friends! we had dinner at bellini's and when we got home he surprised me with my favorite red velvet cake and these! :) mmmm... do i have the best husband or what?!?!




...and the best 6 month old ever!

we had to get a newborn hearing screening today. since campbell was in the NICU for 8 days, that puts her in the category of kids that have to get their hearing tested every 6 months until they're 3! ...so off we went and she passed with flying colors! woo hoo!

campbell's dedication

campbell was dedicated this last weekend at church and it was so fun! ron and jackie were able to fly out and be a part of it which is always nice...i'm glad they got to be here for it.

she looked super cute :) and i think she really loved her dress





i wanted to post this on sunday, the day of her dedication...and if i had done that, i would have also said 'happy anniversary to kate and matthew!'

a year ago yesterday

we found out we were pregnant...isn't that strange?!?! and to now have a 5 month old! weird!

once again, you can find me in the kitchen making whoopie :) HA

i thought i would make breast cancer whoopie pies, while its still october




its a vanilla whoopie pie with pink filling with pink and white sprinkles on the outside. i like the cookie part, but i really don't care for the consistency of the filling...so i don't recommend this recipe...

before and after

any wheel of fortune fans in the house?! well, aaron and i watch it all the time! we even have a spin id...is that lame? anyway...i made these a few weeks ago and it got me saying "let's make whoopie pies" all the time. get it? let's make whoopie is the before part and whoopie pies is the after part. moving on...

those got me on a whoopie pie kick. next i made these:




Ingredients

* 3/4 cupunsweetened cocoa powder
* 1-2/3 cupsall-purpose flour
* 1-1/2 tspbaking soda
* 1/2 tspsalt
* 1/4 cupunsalted butter, softened
* 1/4 cupvegetable shortening
* 1/2 cupgranulated sugar
* 1/2 cuppacked light brown sugar
* 1 egg
* 1 tspvanilla extract
* 1 cupmilk
* Meringue Buttercream (recipe below)
* 1/3 cupeach orange and yellow sprinkles

Directions

1. Heat oven to 375 degrees F. Line three baking sheets with parchment. Dip a 1-1/2-inch cookie cutter in extra cocoa and tap onto parchment to create a cookie outline; repeat to make outlines 1 inch apart on all baking sheets; set aside. Whisk together cocoa, flour, baking soda and sal;; set aside.

2. In a mixing bowl beat together the butter, shortening and sugars until smooth, about 2 min. Add egg and vanilla and beat until fluffy, 2 min. Stir in half the flour mixture, then the milk, and beat to combine. Add remaining flour mixture and beat together, scraping down sides of bowl.

3. Transfer batter to a piping bag fitted with a coupler or a 1/2-inch plain tip. Pipe onto parchment, filling the outlines with mounds about 1/2 inch high. Bake, one sheet at a time, until cookies spring back to the touch, 10 to 12 min. Cool on baking sheets 10 min, then transfer to a wire rack with a metal spatula and let cool completely.

4. Spread about 1 tbsp buttercream on flat sides of half the cookies and sandwich with remaining cookies. Cover edges with sprinkles. Can be made up to 1 day ahead and stored chilled. bring to room temperature before serving. Makes about 32.

5. Meringue Buttercream: Whisk together 5 large egg whites and 1-1/4 cups sugar in heatproof bowl of an electric mixer over a pan of simmering water until sugar has dissolved, about 5 min. Test by rubbing the mixture between your fingers-you shouldn't feel any sugar crystals. Transfer bow to the mixer stand with the whisk attachment and beat on high until mixture cools and stiff peaks form, 10 to 12 min. Reduce speed to medium high and add 1 tsp vanilla extract and 4 sticks unsalted, softened butter a little at a time. (Buttercream may curdle but will become smooth as you continue to beat it.) Use within a few hours or refrigerate up to a week. before using, bring to room temperature and beat on low until smooth. Makes about 5 cups.

the icing is WONDERFUL! so bad for you, but so so good

so today, i made these:



* FOR THE CAKES:
* 1-⅔ cup Flour
* 1 teaspoon Baking Powder
* 1 teaspoon Baking Soda
* ¾ teaspoons Salt
* 1 Tablespoon Pumpkin Pie Spice
* 1 teaspoon Ground Ginger
* ½ sticks Unsalted Butter, melted
* ¾ cups Packed Light Brown Sugar
* 2 whole Large Eggs, Room Temperature, Lightly Beaten
* 1 cup Canned Pure Pumpkin Puree
* 1 teaspoon Pure Vanilla Extract
* _____
* FOR THE FROSTING:
* 1 stick Butter, Softened
* 8 ounces, weight Softened Cream Cheese
* 2 cups Confectioner's Sugar
* ¾ teaspoons Salt
* 1 teaspoon Vanilla Extract

Preparation Instructions

Preheat the oven to 350F°. Line two baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt and spices. In a large bowl, whisk together the melted butter and brown sugar until smooth. With mixer on medium speed, beat in the eggs, pumpkin puree,and vanilla extract. Fold in the flour mixture.

Using an ice cream scoop, drop 12 large mounds of batter onto each baking sheet. Make sure to space evenly. With floured fingers, gently press down on each scoop to flatten the shape a little. Bake about 10 minutes. They will be springy to touch. Transfer to a rack to cool completely.

Frosting:
Beat the softened butter with the cream cheese. Add the confectioners’ sugar, salt and vanilla and mix on low speed until blended. Beat for about 2 minutes on medium high speed until nice and fluffy.

Spread the flat side of 12 cakes with the cream cheese frosting. Top each with another cake.

These were also wonderful! ...perfect for fall

4 months - part 2

so...this babe...



had her 4 month check-up today (2 weeks late) and she weighed in at a whopping 14 lb, 2 oz and she measured 24.5 inches long! she had to get her second round of immunizations today, which wasn't fun in the moment, but she's been a happy camper ever since! :) she's the best!

campbell got her first pedicure! :) well, not really a real pedicure...just a polish. she went with my mom and i today when we got our nails done. ...but she loved every minute of it! we are looking forward to our next one!

we went to the fair last night with the hammonds...we've decided to make this an annual outing. we went together for the first time last year, and this was obviously campbell's first time going...and in going to the fair, she got a little bonus concert

camboni's first road trip


look at our car! this is all the junk you have to take with you when you go on a road trip with a baby! geez louise...you may be thinking, 'you probably didn't need all of that stuff...' i assure you we did - my bag, aaron's bag, campbell's bag, stroller, pack-n-play, pump, bottles, bottle sterilizer...it was ridiculous!
we went to st. louis this past weekend for a little woolsey reunion at busch stadium. it was really fun getting to be with family and getting to spend time together. this was actually ryan & lindsay's first time meeting campbell!



we broke up the drive up into 2 days and spent the night in springfield and got to see our sweet friends from searcy, josh & kelli! we always love seeing them and secretly hope that they'll move here someday :) here is a picture of kelli and cam...can you say - double chin, party of 2!



we then headed to st. louis on thursday and did a little shopping and friday we headed downtown...




then we hit up busch stadium and enjoyed an evening game and had absolutely perfect weather for a baseball game! it was wonderful...until our baby started screaming and then spit up on aaron's new cardinals tee (oops)




since it was a night game, camboni was wiped out the next day, so she did a lot of this:




campbell also picked up a new habit while we were gone...who knows, maybe it was big city life that inspired it...
